Cookie Recipe

Double Chocolate Peanut Butter Oatmeal Cookies

Ingredients

1 1/4 cups all-purpose flour.

1/3 cup unsweetened cocoa powder.

1/2 teaspoon baking soda.

1/2 teaspoon salt.

1 cup unsalted butter, softened.

1 1/2 cups granulated sugar.

1 egg.

1/4 cup water.

1 teaspoon vanilla extract.

3 cups quick cooking oats.

1 cup semisweet chocolate chips.

1 cup peanut butter chips.

Preparation

Heat oven to 350 F.

In a medium bowl whisk together the flour, cocoa powder, baking soda, and salt.

Set aside.

In the bowl of a stand mixer fitted with a paddle attachment, cream the butter on medium speed for 30 seconds.

Add the sugar and beat until fluffy, about 3 minutes, scraping down the sides of the bowl occasionally as needed.

Beat in the egg, water, and vanilla extract until combined.

Beat in the flour mixture.

Mix in the oatmeal until combined.

Mix in the chocolate chips and peanut butter chips.

Drop dough by rounded tablespoons 2-inches apart on a parchment-lined cookie sheet.

Bake for about 10 minutes or until the edges are just set.

Remove the cookie sheet from the oven and let them sit on the cookie sheet for about a minute before you remove them to a wire rack to cool.
